These sardines are caught in the Atlantic between April and November when they are naturally at their best. The fish are taken fresh to the cannery, prepared by hand, lightly brined and gently cooked before being packed in organic extra virgin olive oil with a touch of salt.
The result is a firm, meaty sardine with rich natural oils.
